However there are few sites or guides which include everything you need to know about diabetes in my earlier days of suffering from diabetes I found my self surfing the internet daily to find some information that was vital to me, although I come across some really good guides and articles I never was able to find one guide with all the knowledge on diabetes that I needed. However one day I did find this and it has now helped me to educate others on diabetes.



Here is a great recipe for making chocolate chip cookies



1/4 c. margarine

1 tbsp. granulated fructose

1 egg

1 tsp. vanilla extract

3/4 c. flour

1/4 tsp. salt

1/2 c. mini semi-sweet chocolate chips



Cream together margarine and fructose, beat in egg, water and vanilla. Combine flour, baking soda and salt in sifter. Sift dry ingredients into creamed mixture, stirring to blend thoroughly. Stir in chocolate chips. Drop by teaspoonsful onto lightly greased cookie sheet about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. Makes 30 cookies.

3 Super Tasty Savoury Diabetic Recipes

- 2 tbsp. green peppers, diced

- 2 tbsp. Worcestershire sauce

- 1/2 tsp. salt, seasoned

- 1/2 c. water

- 2 tbsp. pimento, chopped

To prepare combine all the ingredients in a casserole dish, place in the oven and bake at 350 degrees for 45 minutes.



2) DELICIOUS SALMON SNACK



You will need:

- 6 oz. salmon

- 1 tbsp. chopped green pepper

- 1/4 tsp. onion flakes

- 1/4 tsp. horseradish

- 1 to 2 tbsp. diet French dressing

- 3 oz. Swiss cheese

- 6 slices tomatoes

- 3 slices of toast



To prepare mix the first 5 ingredients together and then divide the mix into thirds. After this spread the mix on 3 slices of toast and 1 ounce cheese and 2 slices of tomato to each slice. Finally, place under the broiler until the cheese bubbles.



3) CHEESE AND ONION CASSEROLE



You will need:

- 8 oz. onions. sliced

- 4 oz. Swiss cheese, grated

- 4 eggs, slightly beaten

- 2 c. skim milk

- 2 tsp. salt

- 1 tsp. pepper

- 1 tsp. garlic powder

- 4 slices enriched white bread, crumbled, divided in half



To prepare combine all the ingredients except 1/2 of the bread crumbs in a casserole dish. Mix them well and then top the casserole with the remaining bread crumbs. Place the casserole in the oven and bake at 350 degrees for 25 minutes (or longer if the casserole is not cooked all the way through. The finished casserole should serve 4 people.

If you are worried about the sugar used in a graham-cracker crust used for some pies and/or cheesecakes, make your own. The recipe below makes a great graham cracker crust using Splenda. Fill with your favorite no-sugar-added pie or pudding filling for another yummy dessert you can enjoy!

LAYERED CHOCOLATE DESSERT

Layer 1:

1/2 cup all-purpose flour

1/2 cup whole-wheat flour

1/2 cup butter, melted

1/2 cup finely chopped pecans

Preheat oven to 340 degrees.

Combine all the ingredients together in a medium bowl and mix together thoroughly. Pat into the bottom of a 13 x 9-inch glass baking pan. Bake at 350 degrees for 12 to 15 minutes until lightly browned. Remove from oven and allow to cool completely.

Layer 2:

1 brick (8-oz) light cream cheese, softened

1 cup sugar-free powdered sugar*

1 cup sugar-free frozen whipped topping, thawed

Mix all three ingredients together and spread over the top of layer one. Refrigerate until thoroughly chilled.

Layer 3:

2 pkg (4-serving size) sugar-free chocolate instant pudding mix

3 cups fat-free milk

1 tsp vanilla extract

Mix all ingredients together in a mixing bowl and beat until thickened. Pour over layer two. Refrigerate again to chill through.

Layer 4:

Additional sugar-free whipped topping, thawed

1 cup chopped pecans

1/2 cup sugar-free chocolate chips for garnish, if desired

Spread the whipped topping completely over the chocolate layer. Sprinkle the chopped pecans over the whipped topping. Garnish by sprinkling the chocolate chips over the top, if desired.

GRAHAM CRACKER PIE CRUST FOR DIABETICS

1 1/4 cups graham cracker crumbs

3 tbsp Splenda granulated

6 tbsp butter, melted

Combine crumbs and sugar in a medium bowl. Stir in the melted butter until well blended. Press mixture onto the bottom and sides of a 9-inch pie plate. Chill 1 hour before filling with your favorite pie filling.
