Diabetic Candies: Strawberry Fudge Balls and Texas Cow Patties

1/4 cup sugar-free strawberry preserves, seedless or strained

finely chopped plain almonds and/or cocoa powder for rolling

Combine the melted chocolate with the softened cream cheese and blend till blended.  Stir in cookie crumbs and preserves.  Chill overnight. take away from refrigerator and form into 1-inch sized balls.  Roll balls within the crushed almonds and/or cocoa.

TEXAS COW PATTY CANDY

1 stick butter

2 cups Equal Sugar-Lite

1/4 cup cocoa

1/2 cup low-fat milk

1/3 cup creamy peanut butter

3 cups quick-cooking oats

1 tsp vanilla extract

In a 2-qt saucepan, mix butter, Equal, cocoa and milk.  Cook over medium heat, stirring typically, till mixture begins to boil.  Boil for a full 2 minutes, stirring typically. take away mixture from the warmth and add vanilla and peanut butter.  Stir till peanut butter is melting.  Add the oats and stir till all the oats are coated.  Drop by a teaspoon onto waxed paper or gently buttered cookie sheets. permit to cool down totally therefore candy can set.

BROWNIE PIE

1 stick of howeverter

1 cup Equal Sugar-Lite*

1/4 cup unsweetened cocoa powder

2 eggs crushed or 1/2 cup egg substitute

1/2 tsp vanilla

1/4 cup flour

1 cup chopped pecans or walnuts

Prepare your favorite sugar-free piecrust shell but don't bake. 

Melt butter in saucepan and mix in cocoa powder. mix in alternative ingredients, except nuts.  Mix well.  Add nuts and blend in.  Pour into pie crust shell.  Bake at 350 degrees for forty minutes.

For a special dessert, add a scoop of sugar-free vanilla ice-cream to every pie slice and drizzle sugar-free chocolate syrup (I love the Russell Stover brand) over prime of ice cream. Sprinkle with chopped nuts, if desired. 

Note:  For a chocolate lovers' birthday treat, dress every slice as mentioned on top of and insert a birthday candle into the ice-cream of the honorees' slice. otherwise you may place the candles on the pie before serving, then cut into slices, add the ice cream and syrup when the candles are blown out. that might most likely work higher with a baby and also the alternative methodology higher for an adult.

*May substitute Splenda Sugar Blend
