1 teaspoon vanilla
1/2 cup pecans chopped

In atiny low bowl, beat the cream cheese, chocolate, sweetener, and vanilla till swish. Stir in pecans. Pour into an eight in. sq. pan lined with foil, cowl and refrigerate overnight. Cut into sixteen squares. serve chilled. Yields sixteen servings.

OLD FASHION PEACH FANTASY
1 pkg sugar-free strawberry gelatin
1 pkg sugar-free lemon gelatin
4 cups sugar-free ginger ale
1/2 cup low-fat powdered milk
1/2 cup water
1 tbsp lemon juice
1 will (16-oz) peach halves or slices (not in significant syrup)

Bring the ginger ale simply to a boil in an exceedingly saucepan. place the strawberry and lemon gelatins into a medium heatproof bowl; add the ginger ale and stir till all gelatin is dissolved.

In atiny low bowl, combine the powdered milk, water, and lemon juice; mix well. Chill. Whip the chilled milk mixture till stiff. Fold within the chilled gelatin mixture and pour into a springform pan that has been oiled gently with salad oil.
Refrigerate to line.

To serve, take away sides from the pan. Drain the peaches well and use to embellish the gelatin.

Diabetic Candies: Strawberry Fudge Balls and Texas Cow Patties

1 stick butter

2 cups Equal Sugar-Lite

1/4 cup cocoa

1/2 cup low-fat milk

1/3 cup creamy peanut butter

3 cups quick-cooking oats

1 tsp vanilla extract

In a 2-qt saucepan, mix butter, Equal, cocoa and milk.  Cook over medium heat, stirring typically, till mixture begins to boil.  Boil for a full 2 minutes, stirring typically. take away mixture from the warmth and add vanilla and peanut butter.  Stir till peanut butter is melting.  Add the oats and stir till all the oats are coated.  Drop by a teaspoon onto waxed paper or gently buttered cookie sheets. permit to cool down totally therefore candy can set.
